Which has dedicated 30 years of services in the field of making and catering sweets and food products in the hospitality, food & beverage industries. In order to access a larger consumer base, Patel's Chhappanbhog extended its product offering to include food options across snack and meal times, and across price points. Further, in order to improve visibility and to increase the number of customer touch-points, Patel's Chhappanbhog decided to create a Cloud Kitchen.
2. How can customers access Patel's Chhappanbhog?
Customers can access Patel's Chhappanbhog offerings through multiple channels: (a) Its mobile application, website, or centralized call center; (b) Various food aggregators like Zomato, Swiggy, Uber Eats, Food Panda, etc; (c) Take-away and delivery outlets.

3. How does Patel's Chhappanbhog intend to build scale?
In order to achieve efficiencies and build scale, the company has standardized all its business processes – from production to customer experience.
A. Industrialised Kitchen:
While the company continues to create new products and recipes through its internal R & D processes. This, apart from ensuring quality and consistency of taste, allows for significant economies of scale and scope.
B. Capital Efficient Formats:
The outlets are designed to be capital efficient: (a) The outlets have a small footprint (it is a flameless model - all the food is pre-packaged and is sent to individual stores); (b) The outlets have standardized decor and equipment and are modular thus allowing replicability (Savings in cost and time) in opening up new stores.
C. Technology Enabled:
The company has in-house developed and invested in technology backbone to support its operations across the value chain from production planning, to supply chain, to outlet operations, and to customer relationship management. The integrated POS allows the management, franchisees, and store managers to track the real-time performance of the outlets, their inventory levels, and service delivery efficiency.
The web/mobile interface allows customers to track their orders, and provide their feedback. Date analytics allows customer profiling, tracking consumer behavior, and demand forecasting.

6. What is the Business Model?
The food is processed and pre-packaged at a Central Kitchen and sent to individual outlets. The staff at the outlet heat and assemble the final product before serving/delivering it to the customers.
Customers can avail themselves of the food from Patel's Chhappanbhog (Takeaway) and opt for deliveries.
For delivery order generation apart from its own channels (Web, app, and a Centralized call center), Patel’s Chhappanbhog has tied up with various food ordering and delivering aggregators, including Swiggy, Zomato, Areo, and Food Panda.
This means that the outlet manager shall never have to spend time on a Telephone to take orders from its customers and can focus all her energies on attending to and providing the best customer experience possible.
All outlets are assigned defined territories and each of the territories is “ring-fenced” technologically across order generation platforms (Both in-house and External) to protect the catchment area of such outlets. This is a part of the Franchise Agreement.
7. What are the roles and responsibilities of Patel’s Chhappanbhog?
Patel’s Chhappanbhog shall grant the Franchise. The Franchise is to own and operate a particular outlet under the brand “Patel’s Chhappanbhog” for an initial period of 5 years upon execution of a franchise agreement and payment of the required franchise fee. Upon the expiry of the initial term, the franchise can be renewed upon mutual consent.
Patel’s Chhappanbhog shall assist the Franchisee to identify the location of the outlet and assist in planning its layout, plan, equipment, furniture, and fixture requirement.
Patel’s Chhappanbhog shall install its Point-of-Sale (POS) hardware and software at the outlet and train the Franchisee’s employees/outlet staff to use the system. The company shall also train the Franchisee’s employees/outlet staff to assemble the food products, and to operate the kitchen equipment, and shall provide standard operating procedures (SOPs) for store cleanliness, hyaline, and etiquette while dealing with a customer.
Patel’s Chhappanbhog shall assist the Franchisee to develop and execute Marketing activities for the local market.
Patel’s Chhappan Bhog shall also act as the payments and collection agent to its Franchisees (more on this in #11)

9. What are the roles and responsibilities of the Franchisee?
The Franchisee shall procure a suitable store/shop for setting up the outlet, and procure and keep in force all permissions and clearances to set up and operate the outlets.
The Franchisee shall pay and be responsible for store operations, customer service, and the agreed local area marketing activities.
10. What is the Investment and how much money shall an outlet make?
The Cloud Kitchen format only allows for takeaway and delivery.
Given the differences in the formats and their revenue potential, the Investment and returns are also different. The typical investment and returns metrics for the format are given below:

Capital Investment includes the cost of equipment, furniture & fixtures, and civil costs, but does not include the lease deposit. These are indicative, as the actual cost will depend on the area of the outlet, its conditions, layout, and location. Exclusive of all applicable taxes.
Against the inventory at the store. Refundable at the end of the Franchise period.
11. What is the accounting procedure and how do the funds flow?
The Products are sent to the outlets along with the challans multiple times during the week. These challans are consolidated at the end of each month And an invoice (Including Applicable Taxes) is sent to the Franchisee.
However, the invoices are not payable on their receipt.
On the sale of a product to the customer, the Franchisee outlet charges the applicable taxes (In this case GST of 5%) on the total bill value this means that the Franchisee outlet will have to procure its own GST registration.
As Patel’s Chhappanbhog is the payments and collection agent for its Franchisees, it will collect all sales proceeds, discharge liabilities of the Franchisee with respect to the products, and disburse the balance to the Franchisee. The Franchisee shall continue to be responsible to meet all operating costs with respect to the outlet, including rent, salaries, and utility charges.
12. But how does it actually work?
At the end of each month, Patel’s Chhappanbhog prepares a Profit and Loss Account (P&L Account) for each Franchisee outlet.
The sales proceeds of the Franchisee outlet are to be credited/deposited into Patel’s Chhappanbhog bank account at pre-defined intervals. Based on actual sales of the outlet, Patel’s Chhappanbhog deducts costs (Product cost, logistics cost, accessory cost, discounts offered, commissions paid to the delivery partners, etc.) from the Franchisee outlets and transfers the balance to the Franchised outlet’s account.
